Ideas for time lapse video?

I need some ideas for my project. I have to film stuff and speed it up to make it look all fast-like.
This is the link my teacher gave me for examples:

Of course my video wont have that miniature effect since we dont have tilt shift lenses but.... lol.

He wants a theme to the whole video. In the examples, theres traffic, boats, trains etc. and prefers sumthing outdoorsy, but it dont have to be.

Ideas anyone? And thanks so much, you guys will be my saviors!!!

Wow! Sounds like a cool project. Outdoorsy? Sunrises/sunsets always work well ni time lapse (or sped up footage). What about a day at a beach? Where you can show tons of folks moving around in the shot? Also - another great trick is to find a friend to appear in some of the shots (thus giving you a possible theme), but NOT have them move! In other words, if they stand or sit completely still, in one (hopefully comfortable) position, and you roll as the world flutters past them, when you speed the footage up, it will appear that they are almost "normal" and the rest of life if a messy blur, whizzing past them. Another option is to do the same thing, but have them sit in a particularly cool chair, or in a memorable outfit, or in a giant hat. Dig? Have fun !

Customers going in and coming out of a Starbucks Coffee shop.

Landscaper mowing a large area of grass

Recreational boaters launching their boats (our local lake is crazy on weekends!)

Following a farm animal, like a horse or cow.

Fish in an aquarium
